Mexican Avocado Soup

Avocado soup

Serves 2, about 35 min with cooling

  • 3 avocados
  • 2 cups (5 dl) veggie stock
  • 1 handful of chaya or spinach
  • 3 scallions
  • 1 tablespoon lemon juice
  • 1/2 teaspoon herbamare salt
  • 1/4 teaspoon garlic powder
  • Pinch of black pepper
  • 1 teaspoon sea salt
  • Tahini, tomato and sprouts for garnish

How to make it:

  • Place all the ingredients in a high speed blender and blend until desired consistency.
  • If you want it cold a la gazpacho style, place it in the fridge for about 30 min or so.
  • If not, pour into two bowls, add toppings and enjoy.
